Easy mushroom chicken...

So I came up with this the other night when I didnt feel like going to the grocery store and used what I had left to make dinner..

You will need:
Chicken breast
2 cans cream of mushroom soup
1 c. milk
1 pkg Onion soup mix
Herb & garlic spice

I combined them all together in my Celebrating Home "bean pot" (its a clay pot with a lid that cooks stuff beautifully). Put in the oven at 350 for about 1 1/2 hours. The chicken comes out in gravy and ready to serve. I served it over noodles, but it would pair well with rice too.

This is one more of my crazy concoctions that actually turned out really good! YUM!

Pineapple core smoothies!

First let me say this is just the recipe I came up with for my own smoothies. It helps "hide" the fact that you are drinking pineapple core. Pineapple core is used 1-5 dpo to help implantation. I figured it was worth a shot at least!

Ingredients
1/2 bag frozen strawberries
1/5th of the pineapple core (1/5th of the entire pineapple core)
1 can of mandarin oranges
1/2 can of orange juice concentrate (yep the concentrate works better than just juice)
1/2 c. FF plain yogurt
1 banana

Mix well in the blender and add about two cups worth of ice. This makes enough for about three smoothies. (I make extra without the pineapple core for my kids - they love it)...

Grilled chicken "salad"

Ingredients
Slivered blanched almonds
2 chicken breasts
12 Grapes (more or less to taste)
1/2 c. Miracle Whip Light
2 stalks of celery (diced)
Whole wheat bread (for sandwhiches)

Preparation
Grill chicken breasts before hand and let cool.. Cut grapes in half (or fours if really large). Mix grapes, diced grilled chicken breast, Miracle Whip, celery and almonds together. Add salt & pepper to taste. Serve on whole wheat or whole grain breads.

This is a new spin on a traditional dish.. I hope you enjoy!

Lowfat Two bean burritos....

Ingredients
2 cans pinto beans
2 cans black beans
1 bag frozen corn
2 cans diced tomatoes
1 pkg taco seasoning
Whole wheat tortillas
Lowfat sour cream

Preparation
Combine the pinto beans, black beans, corn, tomatoes, taco seasoning, and about 1/2 cup of water in the crockpot. Cook on low for 6 hours. Serve on whole wheat tortillas with the lowfat sour cream. YUM!

Kid friendly tater tot casserole...

Ingredients
Two bags of tater tots
A large can of FF cream of mushroom soup
2 lbs Ground turkey (you can use ground beef I just prefer the turkey)
4 tbsp milk
Shredded mozzarella cheese
Salt & Pepper to taste

Preparation
Layer half of tater tots in the bottom of your crockpot. Pour half of the mushroom soup and 2 tbsp milk over the tots... Put a layer of the ground turkey (already cooked) and repeat til all ingredients are gone. Top off with the shredded cheese and cook on low for 6 hours.

Yummy porksteaks....& "fried" sweet potatoes

If you want to grill some heavenly porksteaks - its easy! Simply marinade your porksteaks for a couple hours in some Fat Free Italian dressing. Then put them on the grill starting on low heat. Then when they are just about done cooking turn up the heat and let them "crisp" alittle bit around the edges.. There is something about these porksteaks that have my kids even wanting more. Simple but delicious! You dont have to add any other spices or dressings to them, they are fab right off the grill!

I also made "Fried" sweet potatoes to go with them. Slice the sweet potatoes up thinly. Put them in a skillet with butter (I prefer real butter) and add a little light brown sugar. Cook them until they are easily cut with a fork. If you let them brown a little it will make them even sweeter! I used 4 potatoes for this recipe for our family of 4 and there were NONE left. My kids devoured them...

Summer fruit salad with dressing!

I love fresh fruit in the summer. I go to our local farmers market and buy fresh produce. But I found a way to make it even more delicious!

Add whatever kind of fruit you prefer to a bowl mix together. In a separate bowl add one can of orange juice concentrate and mix with 1 1/2 cups of fat free plain yogurt and a pinch of sugar (to taste). Mix until smooth. Pour over fruit mixture and enjoy! I put this in the fridge and add more fruit until it is all gone.

My kids LOVE this. I serve it as a side dish with dinners. Its a great way to add a fruit dish to your meal.

I use apples, peaches, pears, pineapple, strawberries, grapes, etc.. You can add whatever fruit you want really and the acid from the orange juice keeps it from turning brown.

You can also use orange pineapple apple juice concentrate or whatever orange juice mixture you prefer but it must have real orange juice in it or your fruit will turn brown. Enjoy!

I served this at my bible study last night and people couldnt get enough of it. :)

Great potato side dish...

I made these with dinner tonight. They go well as a side dish with just about anything...

Ingredients
Potatoes
Garlic (to taste - I prefer real garlic not powder)
Salt
Pepper
Extra Virgin Olive oil
Shredded Cheese
Parsley flakes

Cut up the potatoes into small cubes. Put them in an appropriate baking pan. (I use a glass dish.) Cover the bottom of the pan with potatoes. Pour some Olive Oil over the top of potatoes, not too much or you will make them greasy. Add salt & pepper and some parsley flakes. Mix together well.. Top with some more parsley flakes and put into the oven at 375 degrees. Bake until the potatoes are turning golden brown and top with shredded cheese. Then bake until the cheese is melted and bubbly..

YUM!

My vanilla cake mix...

Here is my own recipe that I came up with. This works perfectly with my "jello" cake recipe below.. Its a very heavy cake that works best covered with jello or strawberries in their own strawberry juice.. Its similar to a pound cake..

Ingredients
1 1/2 c. flour
3 tsp baking powder
1/4 tsp salt
2 sticks real butter
1 c. sugar
1 1/2 tsp vanilla
4 eggs (room temperature)
4 tbsp milk

Preparation
Sift flour salt, and baking powder into a separate bowl. With an electric mixer cream the butter until soft, Add the sugar and vanilla and continue mixing until light and fluffy. Beat in the eggs one at a time. Add in the flour in three batches and then add in milk. Pour cake into a pan and bake at 350 degrees until a toothpick inserted into the center comes out clean.

Varaiation
You can add almond flavoring, lemon flavoring whatever flavor you want instead of the vanilla I just prefer vanilla almost any flavoring would work with this cake..
Like I said this cake works best when topped with fruit, etc.. It doesnt work well with frosting..

Heavenly Pineapple Gooey Butter Cake...

Ingredients
Cake
18.25 oz box yellow cake mix
1 egg
1/2 c. butter melted

Filling
8 oz cream cheese (softened)
3 eggs
1 tsp vanilla
16 oz powdered sugar
1/2 c. melted butter
20 oz can of drained crushed pineapple

Preparation

Preaheat oven to 350 deghrees, lightly grease a 13x9x2 pan. In the bowl of an electric mixer combine cake mix, egg, and butter and mix well. Pat into bottom of prepared pan and set aside. Still using electric mixer, beat cream cheese until smooth, add eggs and vanilla, Dump in powdered sugar and pineapple, and beat well. REduce speed on mixer and slowly pour in butter. Mix well. Pour onto cake mixture and spread evenly. Bake 40-50 minutes. Dont be afraid to make a judgement call on the cooking time, because oven temps may vary. You want the center to be a little gooey, so dont bake it past that point. Remove from the oven and allow it too cool completely.

Top with a little bit of sprinkled powdered sugar. :) This is an awesome gooey butter cake. Warning it can be addicting..

"Jello cake"

Ingredients
Vanilla Cake mix (or you can make one from scratch like I do)
1 tub Whip cream (I use homemade from heavy whipping cream)
2 pkgs of jello (you choose the flavor)
Fruit (I use the same fruit as the jello flavor I choose)
2 c. hot water

Preparation
Make your cake like you normally would. After you pull it out of the oven use a fork to poke "small holes" all over the top of the cake. Mix the two pkgs of jello with 2 c. very hot water. Poor the jello over the top of the cake and let it set.

You can either top the cake with fruit then put whipped cream over the top or put the whipped cream then fruit on top of that..

My favorite versions of this cake
I like strawberry jello with strawberries on top...
It also works well with orange jello and mandarin oranges..
I would be interested to see if you guys try other versions of this and they work well.

Yummy crab dip for entertaining

Cook chicken and cut into squares. Add chicken into your favorite spaghetti sauce. Put in the oven at 350 after sprinkling the shredded parmesian cheese over the top. Serve over Whole wheat noodles. Cheese garlic bread goes well on the side. YUM!

Quick homemade cheese garlic bread.. You can use french bread, or sandwhich bread if it is all you have. Melt a stick of butter and add some roasted garlic into the butter. Spoon garlic butter over the bread and top with shredded cheese.. Bake at 375 until cheese is melted and bread is toasted. YUM!

Ham & Bean soup with cornbread

This is my mom's favorite.. Its so simple but soo good..

Ingredients

16 bean soup pkg (or northern beans)
2 smoked ham hocks
Onion
1 small Turkey ham
Garlic
Cornbread mix

Preparation

Pre-soak beans the night before. Add beans, diced onions, smoked ham hocks, and garlic to crockpot. Cook 6-8 hours on medium or low heat... 30 minutes before serving cut up the turkey ham into squares and put into crockpot, cook until turkey ham is warm.

Prepare cornbread separately (I use Jiffy cornbread mix) as directed on the box. This is the perfect mixture for a great dinner..

My famous Chili / Chilli cheese dip

This is a good "sweet" chilli.. My family loves it...

Ingredients
32 oz can Chili beans (I use kidney beans)
3 cans of Diced tomatoes
1 Diced onion
garlic (to taste)
Ground turkey (ground beef works too but I like the lower fat version)
3 large cans of Tomato Soup
2 cans of tomato paste
1 pkg Chili seasoning

Preparation
Cook & drain meat in skillet and add to crockpot. Add diced tomatoes, diced onion, garlic, and tomato soup into crockpot. Let cook on low heat 6-8 hours, 30 minutes before serving add in the chili seasoning (to taste) and the tomato paste. Stir in and let cook 30 minutes before serving.. I serve it with soup crackers on the side..

Alternative for leftovers

Store leftovers in crockpot and put back in the base the next day. Add one container of Velveeta cheese and stir until melted... Serve with Frito scoops or tortilla chips. This is a good party dish.. The kids LOVE it..

Cheese ball

This is also a big hit at parties...

Ingredients
5 (8 oz) pkgs of cream cheese
5 pkgs of Budding meat pastrami
1 bunch of green onions
1 pkg onion soup mix
roasted garlic
worchestershire sauce

Preparation
Empty cream cheese into a big mixing bowl.. Cut up pastrami into small squares, chop up the green ends of the green onions and put in the bowl with cream cheese. Add 1 pkg of onion soup mix, add a splash of worchestershire sauce (about 1 1/2 tsp or more to taste), and roasted garlic (about 1 tsp). Using your hands mix everything together until it is mixed completely... I recommend letting this sit in the refrigerator overnight for the best flavor, but 4-5 hours is sufficient..

Serve with crackers, I like wheat thins and Ritz crackers... This goes over well at parties.

Goulash...

This recipe I got from my mom. My 13 yo DD LOVES this, she actually requests this all the time...

Ingredients
1 package of Beef stew meat
1 Onion
5 Eggs
3 cups of Flour
Garlic
Seasoning salt
Pepper

Preparation
In a crockpot combine the beef stew meat, onion, garlic, and water. Cook 6-8 hours until meet is tender...

In a separate bowl combine flour, garlic, salt & pepper, and eggs in a separate bowl. Mix together with your fingers.. Mixture should be really sticky. If its not really sticky then add more eggs.. (I "eyeball" it)

30 minutes before serving add small "chunks" of the egg mixture to the crockpot. Cook on high until the "dumplings" are completely cooked. It may take 30-45 minutes depending on the size of the dumplings and the temperature of the crockpot..

Add salt and pepper to broth to taste.. Serve and enjoy!

Chicken & Wild rice soup...

This is one of my personal favorites and its so easy you can put it in the crockpot and leave it to cook all day...

Ingredients
1 whole Chicken
Chicken broth (I prefer to make my own but you can use FF premade broth)
3 stalks of Celery (diced)
2 small boxes of Wild Rice (I prefer paddy grown)
1 Onion (diced)
1 lb Mushrooms (or more to taste)
Garlic (to taste)
Salt & pepper (to taste)

Preparation
I make my own chicken broth my boiling a whole chicken (this can be done the night before). Then I remove the chicken from the bones and put it in the crockpot. If you make your own broth make sure you skim the fat off the top of it.

Add broth, celery, wild rice, mushrooms, onion, garlic, salt & pepper, to crockpot. Let cook 8 hours. I like to serve this with my homemade angel or buttermilk biscuits. YUM! Simple but soooo good..

Chicken pot pie..

Chicken Pot Pie... This is my husband's favorite meal...

Ingredients
2 lbs of Chicken (I use boneless skinless breasts or thighs)
4 Pie crusts (premade work fine)
3 cans of Cream of chicken soup
1 bag of frozen peas & carrots
3 Potatoes (cut into small squares)

Preparation
Take premade pie crusts and layer two crusts in the bottom of the pan (I use a 12x9 glass pan), use a fork to poke holes in the bottom of the crust, and cook in the oven at 375 until they start to turn golden on the bottom. While crust is cooking mix cream of chicken soup, frozen peas & carrots, and the cut up potatoes, and roasted garlic to taste in a pot and heat on the stove til bubbly. You may need to add a little milk to it.

Remove the crust from the oven and let it cool a little bit. Then pour mixture from the pot into the cooked crust. Top it with the remaining two crusts.. I use a fork to press down the ends and make the crust look "fancy".. I put three cuts on the top crust with a knife so that it can vent. Cook until the crust is golden brown and the filling is nice and bubbly.

Serve and enjoy!

My famous taco salad....

This is a great recipe for everyone. Its so easy to make and soooooooo delicious. I get alot of requests to bring this to parties. :)

Ingredients

2 large heads of Lettuce
Shredded Cheese (Mozzarella & Cheddar)
Taco seasoning (1 package is sufficient)
2 bottles of Catalina Dressing (Low fat version use Lite Catalina or FF Catalina)
2 lbs of Ground beef (low fat version use ground turkey)
A big bag of nacho cheese Doritos (low fat version use baked Doritos)

Preparation
Cook the ground beef in a skillet til done. Cut up lettuce, tomatoes, and mix together in large bowl. Add shredded cheese, taco seasoning, and Catalina dressing. Mix thoroughly. Add ground beef (or turkey) when it is cooled off or it will make the lettuce wilt. Before serving "Crunch up" the Doritos and pour over the top, mix together and serve! YUM!
